Ingredients

  • 2 cups spicy quinoa
  • 1 tbsp fresh lemon juice
  • 1 tbsp extra virgin olive oil
  • 1 tomato diced or 10 cherry tomatoes halved
  • 1/2 green bell pepper finely diced
  • 1/2 orange or yellow bell pepper finely diced
  • 1 tbsp cilantro chopped

Directions

  1. Toss all ingredients together and serve cold!
