• 1/2 to 1 can of corn
  • 1 can of kidney beans or black beans
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 tomato, diced
  • 1/4 red onion, diced
  • 6 sprigs of chopped cilantro
  • juice of 1/2 to 1 lemon
  • 2 tablespoons of chopped mint (optional)
  • 4 tbsp extra virgin olive oil
  • sea salt and black pepper to taste
  • 1/2 teaspoon taco seasoning (we use the brand BlendItUp – no msg)
  • 1/4 teaspoon red chili powder


  1. Combine lemon juice, olive oil, sea salt, black pepper, red chili powder, and taco seasoning in a small boil and whisk together
  2. Rinse the canned beans and corn well under cold water
  3. Combine the beans, corn, green bell pepper, red bell pepper, tomato, red onion, and cilantro in a medium to large sized bowl
  4. Add the lemon juice mixture and mix well
  5. You may serve immediately, although it generally tastes better when cold and marinated in fridge for 1-2 hours
