Ingredients:

  • The meat from 1 young coconut (available at any asian grocery store)
  • 1/2 cup of frozen pineapple
  • Add 1/4 cup of young coconut juice
  • 15-20 drops of stevia (I recommend “KAL” brand specifically due to its taste and lack of after taste) – optional

Directions:

  1. Scrape inside of young coconut to get “the meat”
  2. Add all ingredients into a high speed blender until smooth
  3. Freeze for later use or serve immediately. This tastes amazing!
