Mushroom and Tomato Quiche/Frittata

Ingredients

  • 6 eggs
  • 2 tsp coconut oil
  • 1/2 tomato finely diced
  • 1 medium onion diced
  • 2 cloves garlic
  • 5 mushrooms diced
  • 1/2 green bell pepper diced
  • red chili powder to taste
  • 1/4 tsp turmeric
  • 1/4 tsp black pepper
  • sea salt to taste
  • 1 tbsp basil chopped

Directions

  1. Heat oil in deep medium sized skillet on low to medium heat
  2. Saute onion until it is translucent
  3. Add garlic and green pepper and saute for another 2 min
  4. Add mushrooms and tomatoes and saute for 2 min
  5. Add red chili powder, turmeric, black pepper and sea salt and mix well
  6. In a bowl beat eggs along with basil
  7. Pour egg over vegetables in skillet and mix
  8. Cover skillet and cook for 15 min on low heat until well cooked

Prep Time and Cook Time: 30 min

Serves: 4-6
