Ingredients

  • 1 onion diced
  • 15 mushrooms chopped
  • 1 large potato diced
  • 3 cloves garlic pressed
  • 4 cups vegetable stock
  • 1 tbsp truffle oil (if available)
  • 1/2 tsp fresh thyme leaves
  • sea salt to taste
  • ground black pepper to taste
  • 1/4 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 2 tsp coconut oil

Directions

  1. In a stock pot heat coconut oil
  2. Add onion and saute until translucent
  3. Add mushrooms and cook for another 5 min
  4. Add potato and garlic and saute for another minute
  5. Add truffle oil, sea salt, fresh thyme leaves, black pepper, Italian seasoning
  6. Add vegetable stock and bring to boil, then reduce to simmer or 15 min and serve
