Ingredients:

  • 2 leeks sliced, white and green tender parts (see above)
  • 2 medium sized potatoes (russet potatoes)
  • 4 cups vegetable broth
  • 2 tsp coconut oil
  • 1 clove garlic
  • 1 & 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/3 cup chopped parsley or chives

Directions

  1. Heat coconut oil on medium heat in a medium sized sauce pan
  2. Add leeks, cover and saute for 4 minutes, saute for another 3 minutes uncovered until tender
  3. Add potatoes and garlic, saute for 3 minutes
  4. Add broth and then salt and pepper
  5. Bring to boil
  6. Once boiled, reduce to low heat
  7. Simmer for 15 minutes
  8. Puree with a hand blender
  9. Garnish with parsley or chives
