Kidney Bean and Fennel Salad

Ingredients

  • 1 can of kidney beans, rinsed
  • 1 bulb of fennel diced
  • 12 cherry tomatoes quartered
  • 4 tablespoons of finely minced red onion
  • 2 cloves garlic pressed
  • 4 tablespoons fresh lemon juice
  • 4 tablespoons chopped walnuts
  • 3 tablespoons chopped parsley
  • Olive Oil to taste
  • salt and pepper to taste
  • Chopped cilantro to garnish (optional)

Directions

  1. Mix all above ingredients and chill in fridge
  2. Salad tastes better the longer it marinates so prepare in advance of serving!
