• 2 beets peeled
  • 1 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • sea salt to taste
  • ground black pepper to taste


  1. Steam beets peeled for about 15 minutes or until they are tender enough to pierce with a fork
  2. Once steamed and cooled slice beets so that they are about 1/2 cm thick
  3. Combine all other ingredients in a bowl and then add beets
  4. Toss and serve
